Sometimes a recipe grabs me, which I can then never remember, or lose in the depths of a cookbook... or on a piece of paper somewhere.  So I'm trying this out instead.

NEW ENGLAND BUCKWHEAT GRIDDLE CAKES

'WHEAT FREE!'

200g/8oz Buckwheat Flour, 75g/3oz sugar, pinch of salt, 1tsp Quick Yeast, 300ml/10floz Warm water, 1 tbsp Molasses, 50g/2oz melted butter
Mix together dry ingredients, dissolve molasses in warm water, stir into the flour and leave for about an hour (if time).  Melt butter and beat into batter.  Lightly oil well-heated griddle, turn over when the bubbles have dried out.
Serve warm, with butter, jams, syrup and especially maple syrup and crispy bacon
